Sounds awesome!  How hard do they get? (you really can't poke a fork through them?)

I like how you used a blend of nut and soy as a base. What is the purpose of cooking it in the skillet in the recipe?

This sounds nice.. and I love fettucini... I'm hoping medium dry sherry will be a good substitute for the brandy (which I'm pretty sure is sweet).
