Zucchini Rice Casserole

What you need: 

1 package of Yves Veggie Ground Round or other burger-style crumbles
1 small zucchini, chopped
1 small onion, sliced
1 tomato, sliced
1/2 cup uncooked rice
salt
pepper

What you do: 

Heat and crumble Yves Veggie Ground Round on stove-top. Remove from heat. Salt and pepper to taste. Add zucchini, onion, and tomato slices. Add uncooked rice on top. Place in oven at 350 F for 1 1/2 hours. Add water if need be.
One of my favorite meals since childhood.

SO HOW'D IT GO?

This is recipe does need water--about 1 cup to 1 and 1/4 cup. I started without adding water and the rice never cooked. When it did though -- all was quite yummy. I also covered my casserole in the oven.
