Zucchini Pasta Sauce

What you need: 

1-2 tablespoons vegetable oil
3 cloves garlic, crushed
2 zucchini, grated
1 small chilli pepper, chopped finely
cooked pasta, to serve

What you do: 

1. Heat oil; fry garlic for about 3 minutes.
2. Add zucchini and chilli, and cook for 10 minutes, stirring frequently.
3. Mix with cooked pasta.

This was great thanks!  Even my husband who is not a vegetarian loved it. Now that's saying something.

I tried this yesterday with some garlic fettucini. It was delicious. I added a little salt and a cup of veggie stock in the last five minutes to make it a little saucier. I will definitely be making this regularly. Thanks!

Definitely a great new alternative for the ol' garlic & oil pasta sauce I've been using since giving up cheesey sauces and toppings.... I would almost call it a topping or something instead of a sauce; I added a little extra vegetable oil and some salt, and used two small zucchini and it was perfect for about a half pound of pasta. Very yummy! I dont normally cook with zucchini but I'll have to make this sauce a regular  :D
