Yummy Seitan and Sauteed Veggie Sandwich

What you need: 

1/4 lb seitan, cut into small strips
1/2 onion, sliced
1 small green pepper, sliced into small strips
5-10 crimini mushrooms, sliced thin
2-3 handfuls baby spinach
your favorite bread - baguette is yummy
Vegenaise or favorite vegan mayo to taste
salt and pepper to taste
1-2 tablespoon canola oil

What you do: 

Saute all the veggies and seitan in the canola oil until soft.
Add spinach to wilt.
Season with salt and pepper.
Serve warm on toasted bread spread with vegan mayo. Enjoy!
