Yummy Mock Chicken Salad

What you need: 

1 (15 ounce) can chickpeas
1 green pepper or celery, diced
1/2 onion, diced
1/2 cup vegan mayonnaise or ranch dressing (I use Nayonaise)
salt and pepper, to taste

What you do: 

1. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky.
2. Toss in green pepper, onion, dressing and seasoning and stir.
3. You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.
Delicious! I have served this to plenty of meat eaters and they love it!

SO HOW'D IT GO?

I just finished eating this, and it was REALLY good. I was going to be extra lazy and just eat soymilk and cereal for dinner, but im glad i wasn't!  i added some cayenne pepper and used celery instead. also, i added some chopped up carrot and tumeric. sorry theres no picture, it didnt last long enough.

I've reviewed this before and I can't say enough how easy this is to make and very delicious too! I've adaptedthe recipe to my taste and wanted to share. I use the can of chickpeas and mash them and add 2 ribs of celery chopped, 2 scallions chopped, 1/2 green pepper chopped, vegenaise, some lemon juice, some garlic powder and onion powder, salt and pepper and a squirt or two of mustard. You'll notice that is a lot of celery but it adds such a nice crunch. It's so good that I make this at least once a week!

this was a fantastic inspiration to me!  i made two versions of this tonight.  each with a different flavor profile.  one was curry, the other was fresh-springy-veggies.  thanks!

Holy cow! I stand corrected...this DOES taste a bit like chicken salad! However, the texture is much better than what I remember chicken to be like. I used one green onion, a medium stalk of celery and added a 1/4 tsp of Spike and a dash of red pepper flakes instead of salt and pepper. I will be making this very often!

This sounds like a great recipe, especially since I often have all those ingredients on hand. It'll be the perfect meal for this evening because my husband won't be home (he's not much into the chick peas). I bet this would be great with a little sprinkle of toasted sesame seeds!

However, I can't imagine that this would taste anything like chicken salad. On the other hand, that's a good thing. The reason I stopped eating chicken was because I didn't really like it!

this was really good, but tasted nothing like chicken salad.
anyhow, it was very tasty and I liked it alot.
I added red peppers instead of green, green onions, a little bit of curry powder and 1/2 of a finally chopped apple. i will definitely make it again!

I like this a lot. I used lots of vegenaise and celery and used red pepper instead of green. I also added some garlic powder to it.
