Yummy Mock Chicken Salad

What you need: 

1 (15 ounce) can chickpeas
1 green pepper or celery, diced
1/2 onion, diced
1/2 cup vegan mayonnaise or ranch dressing (I use Nayonaise)
salt and pepper, to taste

What you do: 

1. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky.
2. Toss in green pepper, onion, dressing and seasoning and stir.
3. You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.
Delicious! I have served this to plenty of meat eaters and they love it!

SO HOW'D IT GO?

I added celery and garlic salt and used just a little less 'mayo' - it was perfect!  Even my picky five year old son likes it!  ;)b

I make this constantly. Its super easy and tastes great. I add a little cumin and ground red pepper to mine.

i really liked this dish. it reminds me a lot of chicken salad. especially since i added all the things i would normally have put in my chicken salad

Delish!  I used maybe a large tablespoon of soy mayo and mustard together.  Added cherry tomatoes, celery, raisins, paprika and garlic powder.  Wrapped it all up in some lettuce for lunch.

Very good recipe.  We had it for dinner on split foccacia bread and I'm taking it for lunch in a wrap.  I used 1/2 lite sour cream and 1/2 mayo, both green pepper and celery, and for seasoning added some McCormick's Grill Mates Montreal Chicken seasoning.  Takes great!  Will definitely make again.

OH MY GADFREY!  I made this last night to have around for lunches.  I used apple instead of pepper and added some dillweed.  I tasted it this morning after the flavors had time to blend and now I can't wait till lunchtime! ;)b

lol when i made this last night i made a double batch thinking that even if my husband didn't like it there would be my lunch for several days.  NOT  my meat loving spouse demolished it! :-D

My 3 year old and I just finished making this together. He loved chipping in helping to mash the chickpeas. :) I added some garlic powder for flavor. Next time I will only use a 1/4 of an onion as I found the onion taste a little too strong for my liking.

Okay so no joke, Ive eaten this for two weeks straight...Its really about as close as you can get to the real thing. I added almonds, grapes, and apples, and yup I love it. I reccomend mashing up the chickpeas very well, otherwise they fall off your bread :)

Meh the first day, awesome the next day cold! I used celery and left out the salt. The only bad part is the onion breath...

I made this last weekend and took the advice of *kmouse*  I added garlic powder and would have added onion powder, but didn't have any.  I liked it.  Some are commenting that it tastes more like egg salad or not at all like chicken salad.  I've never eaten either one.  So, to me, this tastes like true chicken salad.  ;)b
