Yummy Eggplant Soup

What you need: 

4 cups vegetable broth
1 medium eggplant
1/2 to 3/4 cup long rice
vegetable salt, Maggi Seasoning (check ingredients), pepper
vegan cheese (when serving)

What you do: 

Easy...Just cut the eggplant (with the skin) in cube put it with the rice in a casserole and let it cook at medium/high for like 20 minutes or till the rice is cooked. Put in the blender and voilà...Yummy.
Serve with vegan cheese on top.
P.S. The colour is grey, but it's so, so good and easy.

SO HOW'D IT GO?

Thanks for this!  I was searching for an eggplant recipe to suit my very sensitive digestive system.  I used this recipe as inspiration.  I dry roasted the eggplant and pressed out some of the bitter juices.  I threw it in a saucepan along with the veg broth and 3/4 cup brown rice I had sprouted earlier.  I cooked it, then blitzed it in my Vitamix.  Very creamy and hearty.  I left out the cheese and other seasonings and am playing around to see what seasonings taste good and agree with me.  I've realized this recipe can also be translated to using many other veg and different grains. :D
