yummy-easy rice with veggies

What you need: 

2 medium onions, chopped
2 celery sticks, chopped
1-2 bell peppers, chopped
oil for frying
2-3 cups rice
4-5 tomatoes, chopped
4 cloves garlic, chopped
vegetable stock or water
1/2-1 tablespoon paprika
1-2 heaping teaspoons sugar
pinch cinnamon
2 teaspoons dried thyme
2 teaspoons dried oregano
1-2 teaspoons turmeric
black pepper and salt, to taste
chilli pepper, to taste
dash soy sauce
1 (15 ounce) can beans
leafy greens, for serving

What you do: 

1. Put onion, bell pepper and celery into a saucepan with oil. Fry until onion is golden and starts to brown lightly. Add tomatoes and rice, and garlic. Stir around a little, and add enough water or stock to cover the rice. Add all the seasonings except salt, black pepper, soy sauce and chili.
2. Cook uncovered until most of the water has evaporated, then add the remaining seasonings. Check if the rice is ready. If not, add more water or stock and cook some more. It should take about 20 minutes for the rice to be ready.
3. When almost done, add the beans. Wait until all the liquid is gone and rice is done, then serve with plenty of leafy greens on top. It should taste a little sweet and spicy.
Source of recipe: I was cooking with some friends and everyone brought something they had. It was the end of a month, we're all students, so we had to cook with what we had.
