You’re Hot Sweetie Tropical Fruit Kabobs

What you need: 

4 cups pomegranate juice
2 tablespoons ground chipotle pepper
2 mangos, chopped 1-1 1/2"
2 pears, chopped 1-1 1/2"
1 banana, chopped 1-1 1/2"
1 papaya, chopped 1-1 1/2"
1 pineapple, chopped 1-1 1/2"

What you do: 

1. In a medium bowl, combine pomegranate juice and chipotle pepper and stir.
2. Place cut fruit in bowl and marinate for 20 minutes, stirring occasionally. Preheat grill.
3. Place fruit onto skewers. Grill over low heat for 20 minutes or until fruit starts to caramelize, turning once.
This recipe works well with any sweet fruit. If you’re in a hurry, you can buy a variety of pre-chopped frozen fruit to equal about 6 cups fruit. This recipe also works well with any juice, or even tea. If you can’t find chipotle powder, substitute with paprika or a lesser amount of cayenne pepper.

I posted it in the forums before submitting it as a recipe and lime green made it from there, but simplified it by brushing the chipotle pepper directly onto the fruit instead of marinating it in a fruit juice/chipotle blend.


I was reading the recipe (clicked on it 'cause HH's photos are the tastiest things in vegan-town), and thinking, "wait a minute, I thought limegreen came up with this recipe...oh wait. There's here suggestion in the reviews :) Anyway, I made these once a year ago to RAVE reviews with my rugby team.

It's summer.
Time to grill the papaya again.


Oh my goodness, HOW DID I MISS THIS???! This has me written all over it. Now I have to get a grill. ASAP.


i made these at the beginning of summer for my family and a church group (all big meat eaters).  they were so impressed!  these are so simple, but oh so very delicious. 


I made this in a skillet. No grill here. :(
I just threw in: fresh, cubed pineapple, a few T of some kind of red juice (cran-grape?) and habanero powder and cooked until caramelized, only a few minutes.
It was great!
Very unique sweet/spicy flavor.

Easy on the spices! Even if you like hot stuff a lot... the caramelizing intensifies the heat.


Not to review my own recipe or anything  ::), BUT - lime green gave me a really good idea.  Mix lime juice and chili powder together and brush it onto the fruit.  That could cut out the expense of the fruit juice.


Firstly, let me say, Honey, that your photos are really making me wish I was on hanging out on a tropical island right now. Secondly, your recipe sounds and looks so good, I might need to run out and buy an outdoor grill just so I can make this properly.  :)
