York-A-Like Peppermint Patties

What you need: 

1/3 cup corn syrup
1/4 cup vegan margarine spread, softened (I use Earth Balance whipped)
1-1/2 teaspoons peppermint oil or extract, or to taste (I use more)
4-3/4 cups powdered sugar
1 (12-ounce) bag chocolate or carob chips

What you do: 

1. In a bowl, combine syrup, margarine, and peppermint; whip with an electric mixer. Add sugar by the cup while mixing. You should end up with a crumbly, sort of dry bowl of stuff.
2. Pick up a small handful of stuff and start to press it into shape. The size you want is up to you. They are so rich that smaller is better. This process is a lengthy one. It's easiest to use a cookie sheet covered with wax paper/plastic wrap to place them on.
3. Melt the chips until creamy and stir-able. Take it off the heat so it doesn't burn.
4. Coat the patties with the chocolate. This is the messy part and I haven't found an alternative way without special equipment. None the less a fun awesome recipe to do alone or with family.

SO HOW'D IT GO?

These were wonderful!!! Came out perfect. My batter was crumbly and at the consistency it needed to before I used all the sugar up so I stopped there. It was at about 4 cups. I used 3 teaspoons of Peppermint oil. Everyone that had one just ranted and raved about the taste. Thanks so much for the recipe.  :)

  Some of the other comments convinced me not to try to sub anything for the powdered sugar--did anyone do that successfully?

I accidentally added too much earth balance and then proceeded to run out of powdered sugar.  Out of desperation I added some whole wheat flour. It worked!  ;)b  I dont know how these are without the substitution, but with the flour they were amazing! I think my batch was still a little gooey so I had to stick the filling in the freezer for a few mins before coating them. They were still sweet and the texture was good. I froze mine and have been eating them that way.  :)>>> I think next time I will make them with the proper amount of earth balance and substitute some of the sugar with flour. On a side note... for anyone concerned about soy, there is now soy free earth balance!

I'm about to try this recipe, but I'm in a little bit of a panic.
What size of chocolate chip bag is mentionned in the recipe, 'cause I have one with 700 gr and one with about 350 or something.
Anyone know??

I made these to take to 3 family christmas gatherings...they didn't last through the first one.  So good...covering in chocolate was hard, I strongly recommend the double boiler so that it stays warm throughout the whole process.

so yummy. i made these for a b day party and everyone loved them. i cheated and made them in a mini- muffin pan so i didn't have to deal with rolling them.i poured some melted chocolate in the bottom of the pan, waited for it to harden, made the  inside mixture into a ball then put more chocolate on top.  i lightly dusted them with coco power and they looked oh so pretty.

I made these at Easter with my grandsons and we rolled them to look like easter eggs. The boys had fun making them and they were soooooooo good! We will make this a tradition ;D

Basically, like everyone else said, these are freakin amazing!  I made half a batch and it still made a lot.  I made part mint, which was delish.  I made the other half orange and OMG  :)>>>  try it with orange flavoring!  It is so crazy good. ;)b
