Wild Rice Salad with Grapes

What you need: 

1 cup wild rice or wild rice mix
1 cup of grapes sliced (red or green)
chopped scallions or onions to taste (I just use whatever I have in the fridge)
1/2 cup celery
handful of sugar snap peas or snow peas
handful of cashews or almonds
2 tablespoons of vinaigrette style salad dressing

What you do: 

Cook rice until tender and rinse with cold water until cool. I like to use leftovers from the night before.
Slice grapes. Chop celery, onion and nuts. Snap the ends off of the pea pods. Mix all ingredients together. This can marinate in the fridge for a few hours or can be eaten right away.
This is the basic recipe, but I use various fruits, vegetables and dressings depending on what is in the refrigerator.

SO HOW'D IT GO?

I make this all the time during the summer and I love it! I make it with only wild rice, broccoli rather than snow peas, and walnuts rather than cashews/almonds. Finally, I also use more dressing (I just pour from the bottle until I think there's enough). YUM! :)
