Wild Rice Casserole

What you need: 

1 cup wild rice, uncooked
1 lb. fresh mushrooms, sliced thickly
1 cup minced onion
3 cup vegetable broth
3 cloves garlic, minced

What you do: 

Rinse wild rice well. Combine wild rice, mushrooms, onion, and garlic in a 3 quart casserole dish. Pour broth over it all, cover, and bake at 350 degrees for about 1 1/2 hours.

SO HOW'D IT GO?

This was pretty good.  I used mushroom soup from Imagine in place of the broth, sauteed the onions and mushrooms in olive oil before mixing in, threw in some cooked great northern beans, and added two tablespoons of whole wheat flour, along with some salt.  It took almost 1 1/2 hours to bake and I stirred it about every 20 minutes.

I had to adjust cooking time a lot.  Overall, it was good, but needs a little more spice ( but I am from New Orleans).
