Whole Grain Veggie Wonder

What you need: 

6 slices whole grain bread (big pan)
1 avocado
1 yellow tomato (you can use two red, but yellows have a great flavor)
1 red tomato
1 green onion
1 English cucumber
veggie mayo
sea salt
pepper
mustard!!!

What you do: 

1.)Preslice tomatoes 1/4 thickness, sprinkle with salt and pepper.
2.)Preslice the cucumber, diagonally, 1/2 thickness, sprinkle with salt and pepper.
3.)Scoop avocado into a small bowl and snip the green onion into the same and mash, mash, mash!
4.)Prepare your vegan bread with mayo and mustard on one half and spread avocado and green onion on the other.
5.)Stack tomatoes on the mayo/mustard side, add cucumbers and avocado side, slice and serve!
I successfully removed my husband from the meat eater category with this recipe...the mustard makes the sandwich.

SO HOW'D IT GO?

This is really yummy.  I felt weird using a recipe for a sandwhich, but this is a really good combinations, and my whole family loved it.
