Whole-Grain Breakfast

What you need: 

1 cup leftover cooked grain: rice, millet, etc.
1/2 cup nondairy milk, plain or vanilla
½ to 1 tablespoon maple syrup
Choose some or all of the following:
1-2 tablespoons raisins
2-4 chopped dates
other chopped dried fruit
1 to 2 tablespoons nuts or seeds; I like almonds and walnuts (1 tablespoon each)
shredded unsweetened coconut, to taste

What you do: 

Combine rice and milk in a microwave-safe bowl. Stir in maple syrup and whatever other nuts/dried fruit you like. Microwave 2-3 minutes, or until the milk bubbles.
This is such a soothing, nutritious breakfast, I always try to remember it when we have leftover grain on hand!
You could probably chop fresh fruit onto this, too, after it's been microwaved. And you can add whatever spices (cinnamon, nutmeg, etc) you like. The possibilities are endless!

Oh man, I never would have thought to use leftover rice for breakfast...this sounds delish, I'm going to make rice for dinner tomorrow just so I'll have some for this!

I have been doing a VERY simpplified version of this for YEARS (started when I was a poor college student). I would take leftover rice, add milk and cinnamon sugar, and microwave. This is even heartier and better! I usually make grains in a pilaf or something savory, so I'll have to try making some plain grains to add to salads and such so I can try this breakfast with something other than rice!

yummmm!!!! i used vanilla yogurt instead of milk, and i had half a banana and half an apple chopped on it. i used almonds too. very good and soothing.
