2 cups frozen green peas
1/2 cup water
1/4 cup plain nondairy milk (I use soy)
1 tablespoon vegan butter
salt and pepper, to taste
1. Boil peas in the water for about 2 minutes. Do not overcook them. Drain.
2. Put peas, milk, salt, pepper and vegan butter in a blender and blend until smooth. (You can also use a food processor or immersion blender.)
Yes, it looks like baby food but it's a nice and a much lower calorie alternative to mashed potatoes. Plus, it's tasty, despite the silly name I've given it.
