Wasabi Potato Salad
Yukon potatoes - 12 baseball sized
mushrooms - any kind, 2 cups, chopped
1 sweet onion, minced
celery - 4 ribs, minced
vegan Aolli 1 cup or so (Larrys Market in Seattle WA) They make a great tomato-basil version
Balsamic vinegar (or Worcestershire sauce)
1 tablespoon olive Oil
2 tablespoon Wasabi
Fresh cracked pepper to taste
1 red, 1 orange, 1 green bell pepper - minced
Boil potatoes (cubed for salad)
Caramelize 3/4 onion and all mushrooms using olive oil and balsamic vinegar
When potatoes are tender, drain and chill.
All other vegetables, caramelized and minced, combine.
Combine all ingredients after chilled and serve.
Be kind to your guests - bring napkins - this is spicy! I try not to add salt, as the potatoes will absorb it anyway.
