Veggies YUM! Salad

What you need: 

1 ear corn, kernals removed
1/2 avocado, peeled and chopped
2 carrots, chopped
2 radishes, chopped
Olive oil
Braggs Amino Acids
Lemon juice

What you do: 

This makes a nice, light salad. Very filling too!
1) Combine chopped vegetables in a bowl. Drizzle with oil, Braggs, and lemon juice. Stir to combine and adjust dressing to taste. Be careful to not add too much dressing--the vegetables should be lightly covered, not swimming.
That's it! Eat it up!

I'm not much of a salad eater, but this was really good! I didn't have radishes or avocado at the time, so I added red chard in replacement. I always liked the crunch that raw corn has.

Sooo very good!  Who knew raw corn could be so delicious?
I swapped cucumber for the radishes and added a handful of green onions.
I think I'll add some cayenne to my next batch, and maybe try some tomatoes...

I ate this for breakfast this morning!  No carrot, I had them just plum forgot..but I added cucumber, tomato and green beans!  Oh and peppered the heck out of it before eating.

Thank you, BayPuppy, for this recipe! I just made it to go with our Mother's Day dinner.
I doubled it and added a little extra avocado and radish, and shredded the carrot. The flavours all go really well together.

I made this for lunch today and it was so good.  I never really thought about eating raw corn before.  Corn was always something you grilled or boiled or popped.  I used lime juice instead of lemon and just put the whole avocado in it.  Next time I may toss in a handful of fresh cilantro.  Not because it needs any changes, just because I'm addicted to the cilantro-lime combination.

I tried this last night and it WAS yum! Very easy to make (I like that! Cuz I be a lazy mutha.) I diced all the veggies, used Tamari sauce (I didn't have Braggs), and added some coarse black pepper--it turned out great. Thanks Puppy! ;-)
