Veggie Side Dish
1 tablespoon olive oil
1 medium bell pepper, chopped 1"
1 medium onion, chopped 1"
1 (15 ounce) can stewed tomatoes
1/4 teaspoon minced garlic
1. Heat olive oil in a medium size sauce pan. Add onions and bell peppers and saute until they become limp.
2. Add stewed tomatoes and minced garlic, and simmer on a low fire for about 5 minutes.
Serve as side dish or over rice.
