Veggie Scramble

What you need: 

1 block extra-firm tofu
1 carrot sliced
1/2 zucchini sliced
1/2 yellow squash sliced
1/2 red onion chopped
4 cloves garlic sliced
1 tablespoon olive oil
1/4 cup vegetable broth
1 teaspoon soy sauce
seasoned salt and pepper to taste
1 teaspoon dried thyme
1 teaspoon dried basil

What you do: 

Heat the olive oil and vegetable broth over high heat. Saute the carrots, zucchini, yellow squash, red onion and garlic until tender. Crumble the block of tofu into the mixture. Add the soy sauce, salt, pepper, thyme, and basil. Stir over high heat until everything is mixed and well heated.
