Veggie Fried "Chicken"

What you need: 

1 package of chicken-style seitan
1 package of crackers (I prefer saltines)
2 tablespoons of Ener-G-egg replacer
roasted red pepper
salt
pepper
vegetable oil

What you do: 

Drain the pack of seitan and take it from the package. During preparation , put the oil in your pan and begin heating it. Tear the seitan into smaller chunks. in a separate bowl, crush some of the crackers (leave slightly "chunky" and add a pinch of salt, pepper, and roasted red pepper, mix well. Take the chunks of seitan and roll in the egg replacer then roll in the cracker mix, make sure to cover all of it, and place in the frying pan. Your cracker mix will get goopy pretty fast, so any time that happens before you finish, make more. Fry until golden brown on both side, serve and enjoy!!
