Vegetarian Chickpea Recipe

What you need: 

1 teaspoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1/2 head cauliflower, chopped
1 (15 ounce) can chickpeas, rinsed and drained (or 1/2 cup dried, fully cooked)
2 teaspoons cinnamon
1 teaspoon cumin
1 teaspoon allspice, optional
sea salt, to taste
1 lime, zested and juiced

What you do: 

1. Heat a large pan to medium and sauté the onion in olive oil until translucent. Add the garlic, and allow it to cook until soft.
2. Toss the cauliflower in the pan until it is coated in oil, and allow it to cook until it is starting to brown. Add the chickpeas to the pan, sprinkle the spices, salt and lime zest over the whole dish, and stir to combine.
3. Pour the lime juice into the pan and cover it. Allow this to cook for at least 10 minutes, for the beans to absorb the flavor.
This is fantastic served over greens, but like some of my other healthy vegetarian recipes, it can also be served on a cooked grain if you like.
