Vegetable Burgers

What you need: 

3/4 cup water
3/4 cup textured soy protein granules
1/3 cup shaved carrot
1/3 cup flour
1/3 cup mushroom, minced
1/3 cup green onion, minced
1/3 cup diced white onion
1/3 cup red pepper, minced
1/3 cup minced walnuts
1/4 cup fresh basil, minced
1/4 cup oats
1/4 cup fresh thyme, minced
3 cloves garlic, minced
2 tablespoons nutritional yeast
1 tablespoon ketchup
1 tablespoon soy sauce
2 teaspoons egg replacer, prepared (arrowroot or EnerG)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon sage
1+ tablespoon olive oil

What you do: 

1. Simmer water and textured soy protein in a small pot until the granules becomes soft and water evaporates.
2. Except for the olive oil, combine all remaining ingredients in a bowl. Add the soy protein to the ingredient mixture until well combined. Form into 6 to 8 patties.
3. Put olive oil on a skillet and heat over medium heat.
4. Place patties in skillet and fry each side until cooked (will take several minutes per side). Add more olive oil as you go.

SO HOW'D IT GO?

I didnt have mushrooms but they turned out awesomely. So many ingredients to play around with.  And they held together great too! My other recipes always crumble..except this one. Will make again.

They're really good!

Held together nicely, unlike most of the other VBs i've made.
