Vegan Watercress Soup Recipe

What you need: 

1 teaspoon coconut oil
1 onion, diced
2 cups fresh or frozen peas
4 cups water or vegetable stock
1 cup fresh watercress, chopped
1 tablespoon fresh mint, chopped
pinch salt
black pepper, to taste
1/2 (14 ounce) can coconut milk (or other nondairy milk)

What you do: 

1. Melt the coconut oil in a large soup pot. Add the onion and cook until soft, then add the peas and the water.
2. Bring to a boil, then lower the heat, and add watercress, mint, salt and pepper. Cover and simmer for 5 minutes.
3. Puree the soup until smooth using a blender or handblender, pouring in the coconut milk.

SO HOW'D IT GO?

I couldn't get enough of this!  I only used 3 cups of broth which turned out to be a perfect consistency for me and I used a whole bunch of watercress because I love it so.  What an amazing flavor combo AND it was easy to make.  Thanks for this recipe! :D
