Vegan Vanilla Cake with Cocoa Glaze

What you need: 

Cake:
1 1/2 teaspoon egg replacer
1 cup almond milk
1/2 cup pure maple syrup
1/4 cup canola oil
2 teaspoon apple cider vinegar
1/2 teaspoon vanilla extract
1 cup flour
1/2 cup whole wheat pastry flour
2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
Glaze:
1/2 cup cocoa powder
2 cups powdered sugar
2 teaspoon vanilla & 5 tablespoon soy milk

What you do: 

Preheat oven to 350 degrees. Spray and flour a 9x9 inch square baking pan. In a large bowl whisk together egg replacer, almond milk, oil, vinegar and vanilla until completely combined. Ina separate bowl, mix flours, baking powder & soda, and salt. Add wet ingredients to dry and stir to combine. Pour into prepared pan and bake about 35-40 minutes. Once cooled, combine cocoa powder with powdered sugar. Add vanilla and soy milk gradually until it reaches spreading consistency. Spread over cake.
For the number crunches - one serving is 170 calories, 7 grams fat (0 saturated)
