Vegan Vanilla Cake and Fluffy White Frosting

What you need: 

Cake

1 cup vegan milk [I used unsweetened coconut milk]
1 tablespoon apple cider vinegar
1 1/2 cups flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup canola oil
1/4 cup water
1 tablespoon lemon juice
1 1/2 tablespoons vanilla extract

Fluffy white frosting

1 cup dairy-free, soy-free vegetable shortening
3 cups confectioners’ sugar
3 tablespoons vegan milk
1 tablespoon lemon juice
1 teaspoon pure vanilla extract

What you do: 

Directions for cake
1.Preheat oven to 350 degrees F (175 degrees C). Grease and
flour an cake pan,now I used a 11x8 inch pan,but you can use a 8 inch round cakepan if you'd like.

2.Stir soy milk and vinegar together in a large glass measuring cup.

3.Whisk flour, sugar, baking soda, baking powder, and salt together in a bowl.

4.Briskly mix canola oil, water, lemon juice, and vanilla extract into soy milk mixture using a fork. Stir
milk mixture into flour mixture until batter is lump-free. Pour batter into the prepared baking dish.

5.Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 30 minutes.

 

directions for the frosting

 1. In the bowl of a stand mixer fitted with the paddle attachment, cream the
shortening and confectioner' sugar on medium speed for about 2 minutes.

2. Add the rice milk, lemon juice, and vanilla. Beat on medium speed until
smooth, creamy, and fluffy, about 5 minutes.

Once the cake is fully cooled frost and enjoy.

SO HOW'D IT GO?

This is not about the recipe but about the above comment. There are actually multiple refiners of sugar that do NOT use bone char filters. For instance, I live in Ontario, Canada and both of the main sugar brands around here (Lantic and Redpath) use no animal products or by-products in their refining process. http://dev.redpathsugar.com/faqs/  http://www.lantic.ca/faq.php?lg=en

I would like to try this recipe, and will leave a comment afterward.  But in the meantime I would like to point out that white sugar and processed powdered (confectioners) sugar are NOT vegan.  Every true vegan already knows this.  White sugar is refined and filtered through charred animal bones.  Common powdered sugar is pulverized white sugar.  Suggest using raw sugar, or evap cane juice sugar, beet sugar, or whatever.  Unrefined sugar has not been bone processed.  Some stores sell powdered sugar which is also unrefined and considered vegan.  Other than that I would like to try this recipe!
