Vegan Taco Soup

What you need: 

1 (14-16 ounce) can kidney beans (including all the liquid)
1 (14-16 ounce) can pinto beans (including all the liquid)
1 (14-16 ounce) can hominy (including all the liquid)
1 (14-16 ounce) can corn (including all the liquid)
1 (7-8 ounce) can diced green chilis
1 (28 ounce) can diced tomatoes (including all the liquid)
1 cup salsa
1 (1.25 ounce) package vegan taco mix (I used Simply Organic: Southwest Taco)
1/2 cup diced jalapeños, optional
1 (12 ounce) package vegan ground beef
1 small white onion, diced
1 tablespoon minced garlic
2 tablespoons oil
vegan sour cream, to garnish
cilantro, to garnish
avocado, to garnish
tortilla chips, to serve

What you do: 

1. In a large pot combine the corn, hominy, kidney beans, pinto beans, corn, green chilies, tomatoes, salsa, and taco mix. Add jalapeños, if using, to the pot and turn the pot on medium heat, stirring occasionally.
2. Take the package of vegan taco meat, diced onion, minced garlic, and oil and fry in a pan for about 3 minutes or until thoroughly cooked. Add this to the pot as well, crank the heat up and cook until just about boiling.
3. Serve with tostadas or tortilla chips and garnish with vegan sour cream, avocados, and cilantro... or whatever else floats your boat!

SO HOW'D IT GO?

This soup is great, its very filing.  I omitted the hominy (didn't have) and the crumbles.  I also used poblano pepper instead of jalapeno.  :)>>>

This soup is very good. I've made it quite a few times, and couldn't believe that I haven't reviewed it. Its yummy and it makes a lot!

pretty delicious! i used pink beans instead of pinto, and both kinds of beans i cooked myself to save money / reduce sodium (so i just added water instead of the liquid that would've come from canned beans) i did use canned hominy and tomatoes, but drained the hominy and used no-salt-added tomatoes. oh, and i used frozen corn, and made my own taco seasoning instead of using a packet. i omitted the ground "beef" because it's expensive and just seemed unnecessary. i only used one jalapeno and it was still very spicy... sour cream or avocado would've been perfect to offset the heat, but i didn't have any. but either way it turned out freakin amazing.. awesome recipe!

so good and easy! I used some ground meatish stuff i made from tvp instead of boca. My 2 year old loved it (and she doesn't eat anything) she liked the "tiptoe" beans (pinto beans). Thanks for a great quick recipe!

This soup is WONDERFUL! I couldn't find homily, so I added a can of black beans and 1/2 the jalapenos (because we have a 3-yr old) and it was delicious. My fiance said it was his favorite vegan recipe so far and he had three bowls (and he's all about meat) so a+ :D

this recipe really rubbed me the right way. It was easy and i have leftovers forever. I served it up wtih sliced avocado, homeade vegan sour cream and chips. I made my own taco mix with a recipe I found online and left out the jalapenos just to be on the safe side.

Freakin' Yum!  I threw in some veggies I needed to use up and substituted seitan for fake taco meat.  Makes a ton, which is great because as soon as I get hungry again, that may be a while, I'm having more.

this recipe always turns out great for me! today i used some water to cook the onions,  3 big diced raw jalapenos, and garlic instead of oil to make this a low fat recipe... i also added about a cup of tvp to the soup instead of the vegan ground beef and it was amazing! my bro and bf always gobble this up however i decide to make it which is great because it takes so little time and effort to make :)

This is by far the best soup recipe on this website.
The only thing I would suggest though is if you are cooking for people who can not handle a lot of heat, I would leave out the jalepenos and perhaps even cut the amount of green chilis in half. Great flavor, exactly the recipe I was looking for. Thanks a lot! :)

This soup was wonderful absosutely yummy!!! I brought it to a work pitch in and it had rave reviews!
