Vegan Patty-less Melt

What you need: 

2 slices of vegan dark rye bread
2 slices of vegan cheddar cheese
2 thick slices of white onion
panini grill (optional)

What you do: 

Serve with: ketchup, mustard, pickles, tomato, etc
I like to use my panini maker for this sandwich but a fry pan will work just fine.
First I "grill" the white onion for a few minutes in the heated panini maker until slightly caramelized. (These can also be done in a fry pan with a little earth balance)
Then layer cheese slices and onions onto bread and place in the panini maker until cheese is melted. (4-5 minutes)
I like to dip my sandwich into ketchup or yellow mustard with dill gherkins on the side. This is definitely my favorite way to eat vegan grilled "cheese!"
