Vegan Oatmeal Raisin Cookies

What you need: 

3/4 cup vegan margarine
1/2 cup sugar
1 cup packed brown sugar
1 teaspoon vanilla
1/2 cup nondairy milk (I use soy)
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon cinnamon
1 cup walnuts, finely chopped
1 cup raisins
3 cups rolled or quick cooking oats

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Beat together the sugar, brown sugar, margarine and vanilla until smooth and fluffy.
2. Add the milk and mix until combined. Add the flour, baking soda, salt and cinnamon, and stir until well mixed.
3. Add the remaining ingredients. Batter will be very thick.
4. Drop by 3" balls onto cookie sheet and flatten slightly. Bake for 12 to 15 minutes, or until done.

SO HOW'D IT GO?

Im baking mine right now.... although the batter was very thin.... I even added a little more whole grain flour and it was still thin....  is 1 cup right???  The batter tastes super yummy!!!!
