Vegan Nachos

What you need: 

approx 10 oz tortilla chips, I use yellow ones
8 oz vegetarian refried beans, (may use homemade or canned)
12 oz shredded vegan cheese
12 oz salsa - hot as you like (I use garlic salsa)
6-8 oz vegetarian sausage cooked and crumbled

What you do: 

How to start this crowd-pleaser depends on the type of 'sausage' you use, if you prefer the cook-it-yourself type (Gimme Lean), cut into slices and crumble in the pan as it crisps. For the frozen patties, microwave or cook according to package directions, then crumble.
Put sausage in a bowl and mix with about 1/3 of the salsa. Set aside, and turn your oven on to 450 degrees. Take a medium (3-4 qt) casserole dish, and spread the refried beans across the bottom in a 1/2" to 1" layer. Cover this with the salsa/sausage mixture and put in oven for 10 minutes.
Take the casserole out of the oven, layer 1/2 of your chips over the sausage/salsa, and sprinkle with veggie cheese and another 1/3 of the salsa. Back in the oven for 5 minutes, then repeat with rest of chips, veggie cheese and salsa and place on the top rack of the oven until the top begins to soften.
I serve with whipped tofu or non-dairy sour cream, guacamole, and more salsa.
