Vegan French Toast

What you need: 

1/2 cup applesauce or mashed up banana (125 mL)
1/2 cup mixed fruit orange juice (use any juice you want for any flavor toast!) (125 mL)
a dash of cinnamon or maybe nutmeg if that’s what you like
1 Tablespoon vegan soy butter (Earth Balance)(15 mL)
5-6 slices bread depending on the size works best on a solid slice

What you do: 

1. In a small bowl combine applesauce or banana and orange juice. (If you use the banana you may need a hand mixer) Ad a dash of cinnamon and stir.
2. Melt the soy butter in a nonstick pan over medium high heat (I usually skimp the soy butter to a little and its alright you just have to watch it carefully and continuously flip so it doesn't stick)
3. While the pan is heating, spoon some of the orange juice mix over one side of all the slices of bread. When the pan is ready, place the bread in the pan with the orange juice side down.
4. Spread the tops of the bread with the rest of the mixture. Flip with a spatula when it starts to turn goldenish on the bottom.
Yummy!
