Vegan Chilaquiles!

What you need: 

1/4 cup vegetable oil
1/4 medium onion, chopped
15-20 corn tortillas
2 (15 ounce) cans tomato sauce
1/2-3/4 cups Vegan cheese, to taste

What you do: 

1. Add oil to deep pan, and put on medium-low heat. Add onion to pan.
2. Chop corn tortillas in thirds, and cut those strips in thirds. (they will look like little tortillas chips) Add tortillas strips to pan, and stir until all evenly coated with oil.
3. Let fry for about 5 minutes, and stir until most of the oil has cooked the tortillas. Add both cans of tomato sauce and turn heat to low.
4. Coat cooked tortillas with tomato sauce and stir. Add cheese substitute. Let the "cheese" melt and bang! Done.
