Vegan Cadbury Creme Eggs

What you need: 

1/2 cup brown rice syrup
1 tablespoon margarine (I like Earth Balance)
1/4 cup vegetable shortening
3 cups powdered sugar
1-1/2 teaspoons vanilla
1 12-ounce bag vegan chocolate chips

What you do: 

1. In a large bowl, place the brown rice syrup, margarine, and shortening and use a hand mixer to combine. Cream in powdered sugar until smooth. If you want to separate part the mixture and add food coloring (yellow to make it look more like an egg!) or flavored extracts (orange? coffee?), now is the time!
2. Make sure your hands are clean and cold, take small pieces of the mixture and roll into balls (the size of the inside of a Cadbury Creme Egg!) and place on greased sheet. Freeze this for at least 2 hours.
3. In a medium sized bowl, melt chocolate chips in the microwave. (if you want it to be a little more pliable, sometimes it helps to add a little melted shortening to the chocolate!)
4. Use a toothpick, dip each ball into the chocolate and place on wax paper. You can get fancy and use those egg molds, I found them at Michaels for like a buck. Deal! Freeze until hard and then wrap in foil. Happy hunting!

SO HOW'D IT GO?

Hi guys, forgive me if I have missed something but erinmonster mentions adding milk to chocolate and laura mentions creamer... I could not find either of these ingredients in the instructions or the ingredient list. From what I read all you do is melt the chocolate and dip the formed "eggs" into it. Maybe the recipe has already been changed since you guys posted and I did not see the changes? I'd like to try this as cadbury eggs were my FAVORITE and I'm sad I can't have them anymore :( The person who posted the beautiful pics of these - is the recipe you used the one that is posted as of now? It worked for you, obviously, as they look delicious. I'm curious!

I think Laura removed the creamer from the recipe.  Just melt the chocolate by itself - that should solve the problem - at least the problem that I had. 
And just so you know, they are delicious - the milk/creamer just made my chocolate crumbly.

Hi guys! Maybe the creamer is a bad idea? It worked for me the one time but then I tried again, and it didn't. I am not sure what the deal is, I have to experiment. Maybe it's coconut vs. soy?

I will update the original recipe... I think adding a little earth balance or shortening to the chocolate could help! Or just plain chocolate chips work fine. Sorry for the confusion! Trial and error, I should made sure first!

The insides should be totally great though, I've been doing this combo non-stop. I wouldn't sub all earth balance though, shortening is key!

I failed at this too.  The filling came out fine - I only used 2 cups of powdered sugar though....but when I added the milk to the chocolate, disaster struck - it got all thick and fudge-like - I could barely stir it, definitely not dip-able.  So I tried my best to mold the chocolate in my little egg shape tray, but they were all crumbly....BUT, when I decided to scrape them out of the tray with a knife, the pieces that I could get out were fantastic!!!  I have tons of leftover filling, so when I get more chocolate chips, I will forgo the creamer and just make them like I make my pb cups.

Okay... didn't turn out well at all. I ended up making cadbury egg filling chocolate chip cookies so I wouldn't waste the icing. Maybe next time ?

I just tried to make these and nothing seemed to work when forming the insides to be frozen. I didn't use vegetable shortening, but margarine. Maybe that's why?
Even having cold hands they just melted on to my fingers making a sticky mess. I'm trying to salvage them by freezing the inside in a casserole dish and layering the chocolate over it. I'll post a pic and more info when it's finished.

Ugh.  Decadent! May have to try.  As long as I'm smart and give 7 of the 8 away.  Otherwise I foresee a dangerous sugar high situation.  Yum!
