Vegan Broccoli Soup

What you need: 

1 cup broccoli florets
1 cup nondairy milk (I use soy)
1 tablespoon cornstarch
1 teaspoon garlic
1 teaspoon onion powder
1 teaspoon salt

What you do: 

1. Steam fresh broccoli in separate pan, and drain water.
2. Meanwhile, heat milk and cornstarch on medium heat, stirring constantly until it thickens.
3. Stir in garlic, onion powder, and salt.
4. Stir in steamed broccoli into thickened soup and enjoy.

Preparation Time: 
10-15 minutes

Servings: 
1

Added a little garlic and onion than recipe said and also added nut. yeast- it tasted great. Thank you for this super easy recipe! :)

I liked this rich but protein and calcium rich light dinner. Thanks for the recipe!

Oh yah! I suggest mixing the cornstarch (I used arrowroot) in a little bit of the soymilk before heating it, other wise it gets very clumpy...

I quadrupled everything (but added too much onion powder which kinda fucked it up)  it was  great anyway, not to mention ridiculously easy. Though it's best if you don't make the broccoli too small so it keeps in more flavor.  So I'm definitely making this again, thanks for the recipe!
