Vegan Blondies

What you need: 

1/2 cup vegetable oil
1 cup brown sugar
1/4 cup applesauce
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1 cup flour

What you do: 

1. Preheat oven to 350 degrees F and grease an 8x8" pan.
2. Whisk oil and sugar together. Mix in applesauce.
3. Mix all other ingredients separately, and stir into the wet mix.
4. Bake in prepared pan for about 20-25 minutes.
Source of recipe: I wrote this recipe when I wanted brownies, but didn't have any cocoa powder. De. Licious.

SO HOW'D IT GO?

I was going to make brownies, but my roommate moved out and took the cocoa powder (even though he only used it ONCE the entire year he lived here!), so I turned to blondies. This was the only recipe I could find that didn't call for soy milk (which we were out of) or kidney beans. (Really, kidney beans? Why??) Anyway, I have to say I was pretty disappointed in this recipe. The batter was not at all runny like I expected. It was more like cookie dough. Then the final product was soooo oily. All the oil seemed to sink to the bottom, and now the whole thing is just swimming in it. Obviously, this may be my fault, but I only made a few alterations which I really think wouldn't have affected it. I used canola oil instead of vegetable oil, Ener-G egg replacer for one egg instead of applesauce, and added chocolate chips. I had to cook it longer than called for because it was still so mushy. Fortunately the finished product still tastes good, but I would not recommend this recipe to anyone. Or if you absolutely insist on trying it, maybe use less oil.
