Vegan Apple Quinoa Bites

What you need: 

1 cup cooked quinoa

1 cup quick oats

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 tsp of salt

4 tablespoons light brown sugar

1 tablespoon maple agave (you can use maply syrup or honey as well)

2 cup cubed granny smith apples

1/4 cup of golden raisins

1/4 cup flax meal

2 flax eggs (2 tbsp flax meal and 6 tbps of water mixed till gooey)


What you do: 
  1. 1. Preheat oven to 350 degrees
  2. 2. Prepare your flax egg mixture and refrigerate while preparing other ingredients
  3. 3. Mix all of your dry ingredients in a bowl until well combined
  4. 4. Chop granny smith apples (or variety of your choice) into small cubes and set aside
  5. 5. In a separate bowl, combine your refrigerated flax eggs and maple agave syrup until   smooth
  6. 6. Combine wet and dry ingredients
  7. 7. Add in fruit and stir until all ingredients are combined
In a prepared mini muffin tin (I use coconut oil for the tin, make sure your lightly oil the top of the tin since the mixture will sit above the cup) scoop a heaping tablespoon of your mixture into each muffin cup. 
 
Place into oven and bake for 15 - 25 min or until golden brown. 
 
Cool on wire rack and enjoy. 
 
According to Myfitnesspal, these bites turn out to be 49 calories per serving based on 24 bites per batch.
 
These bites freeze pretty well too.
 
This recipe was adapted from one that I found on Pinterest and I adjusted it to fit a vegan diet and added some extra fruit and used agave instead. It is a great base recipe to build upon.
