V-19 Tasty Health Soup
1- large can V-8
1- 24 oz can crushed tomatoes
1- small can tomato paste
2- cans beans (I prefer chili beans)
1- 12 oz can carrot juice (or fresh)
2 lbs. unpeeled carrots
4- cloves garlic
1/2 head broccoli
1/2 head cabbage
3- stalks celery
1- each: onion, beet, sweet potato, green & red pepper
1- rutabaga, peeled
1- 10 box frozen chopped spinach
Use a large soup pot (8-9 qt). Put all the canned goods plus 4 cups water into the pot.
Next, in a food processor, grind up all the fresh vegetables into very tiny pieces. This is a little tedious but very important because grinding the veggies releases a tremendous amount of flavor and also makes the nutrition more easily absorbed by our bodies.
Put all the ground up veggies in the pot plus the spinach. Add any spices you desire; like veg bullion, sesame oil, Italian herbs; and let simmer for several hours.
This soup is the bedrock of my vegetarianism. If you eat a bowl of this every day for a month you will notice a difference in your health and exuberance. Plus it is very very tasty!
