Unbelievably Good Stuffed Tomatoes
6 whole tomatoes
4 slices wheat bread, crumbled
1/2 onion, diced
1 zucchini, diced
3 ounces vegan cream cheese
1 tablespoon olive oil
salt and pepper, to taste
basil, to taste
1. Preheat oven to 350 degrees Fahrenheit. Wash and cut the tops off of 6 tomatoes, then spoon the seeds out and set aside.
2. In a large bowl, mix the remaining ingredients. You may wish to do so by hand. Spoon the mixture into the tomatoes.
3. Bake for 20 to 25 minutes or until cooked to your liking.
