Unbeef Stew

What you need: 

1 pound extra firm regular tofu, frozen and thawed
1 large onion, chopped
4 cups vegetable broth
5 tablespoons vegan Worcestershire sauce
1 tablespoon tamari
2 cloves garlic, finely chopped
4 large carrots
4 potatoes, peeled and coarsely chopped
1 tomato, seeded and diced
2 teaspoons salt
1 teaspoon pepper
1 teaspoon basil
3 tablespoons margarine
5 tablespoons cornstarch mixed with water until not lumpy

What you do: 

1. Preheat oven to 200 degrees F. Drain the water from the tofu, and cut into slices and squeeze more water out.
2. Then cut the slices into chunks and bake on an ungreased cookie sheet while chopping the rest of the ingredients (check the tofu about every 10-15 minutes so that it doesn't get browned - it should just be dried out, not burned).
3. The tofu should be well dried out, like croutons. Place all of the prepared ingredients into a crockpot, stir well, and cook on high for at least 6-8 hours, stirring occasionally. The stew is ready when it is thick and brown. It makes a lot!

SO HOW'D IT GO?

If you don't have a crockpot and you're unsure whether to make this anyway -- do it.  It was easy and delicious.  I agree with others about cutting back on the worcestershire and the salt.  I used 4 Tb worcestershire and halved the salt.  Next time I'll use 3 Tb worcestershire and use only 3/4 tsp salt.  Also, instead of tofu I used homemade seitan -- I highly recommend the substitution.  I simmered it on the stove for about an hour; probably it would have been a little better if I'd stopped it about ten minutes sooner.  Also, I kind of wished that I'd added peas, both for taste and for color.  All in all, a great dish.

I added celery to the recipe and cut down on the some of the other vegetables because my crock pot is tiny. :) I did end up needing all 5 tablespoons of corn starch. It was delicious! Only thing missing was noodles... I'd love to add those next time.

My omnis wouldn't eat the tofu (I enjoyed the texture because I don't eat it frequently), but said the flavor of the stew was IDENTICAL to beef.

Alterations: Used the earlier suggestion for worchestire (sp?) sauce as a sub because I don't have any, and used Wondra flour as the thickener, added peas.

I'll make this one again for sure!

I would suggest leaving out the tofu.  It was time consuming to "dry out" in the oven, and just tasted like chewy sponges that didn't soak up any sauce.  I really liked it with potatoes instead.  A can of tomato sauce was a nice addition.  As recommended I used less salt, but I thought the five tablespoons of cornstarch was just right.  Thank you for the recipe!  :)

I haven't found many crock pot recipes that I really like, but this is a keeper! Will definitely make this again. I used 4 tablelspoons of Worchestershire, and I only had 3 potatoes around, but other than that I stuck to the recipe. I could of cared less about the tofu, but my husband really liked it. Next time, I'll probably add peas as someone else suggested. Thanks so much!

This was good!  I especially thought that the tofu use (baking dry, putting in stew) was interesting.  However, even as a lover of salt, I think this was too salty.  I would recommend making 2-3 cups of soup stock, then pouring 2-1 cups of water into it.  A lot of the water boils out, which makes it very strong.

Also, I'd put less corn starch in next time.  It becomes thick like a Chinese food sauce.  (You can always add more at the end.)

I added peas, omitted tofu, added steak strips. Next time I will cut down the salt and cornstarch but otherwise this was really really really good.

I rarely chime in on recipies, but I just HAD to on this one. I made this last night and it was delicious! I did not use the Worchestershire sauce and I did not have soy sauce so I just used the balsamic vinegar and blackstrap molasas as recommended. I also used TVP beef strips instead of Tofu since my partner is not a huge tofu lover and a new vegetarian. She loves it! It is soooo savory! I am convinced I will make this again. It is a little on the salty side for us so I would reduce the salt measurement and and a bit more water since my partner likes more "sauce". All in all, though, a GREAT dish!!

This was very good. We added peas and marmite (tastes quite beefy) and used Large nugget tvp instead of tofu. I will definitely make this again!
