Ultra-Easy Lentils
2 tablespoons vegetable oil
1 medium onion, minced
1 medium carrot, peeled and cut into small dice
3 large garlic cloves, minced
3 tablespoons ginger, minced
1 (16 ounce) package lentils ( about 2 cups)
1/2 teaspoon salt
freshly ground black pepper, to taste
5 cups water or vegetable broth
1. Heat oil over medium heat and add onion, carrot, garlic and ginger. Cook until garlic and ginger are aromatic, 1-2 minutes.
2. Add lentils, salt, pepper and water or broth. Bring to a boil, then cover and reduce the heat to low.
3. Cook for 40 min, or until lentils are tender. Season with salt and pepper.
This dish does not have a lot of broth, and I serve it on a plate over rice or couscous. Serve with baked acorn squash quarters in the Winter or with sliced fresh fruit and muffins in the Summer. I hope you enjoy it! Peace Always, Renee Leftovers freeze well!

I got a ton of dinners from this, and ate them over curry mash potatoes, over a big medley of green vegetables with fresh tomatoes, ate them with a roti bread and 'raita', yum! So versatile and yummy.

So far, this recipe has made my college eating experience WAY easier. It's a cheap recipe to get ingredients for, it takes maybe five minutes of prep (easy for the busy student) and then you get a HUGE container of lentils at the end. Not to mention that it's really yummy. I make this every other week, because it lasts me for a long time, what with freezing portions and the like. Thanks for an easy and tasty lentil recipe!
Lentils are so flavorful! I halved the recipe, since I'm just cooking for myself. The ginger is definitely a key ingredient, it's so tasty!
