Ultimate Vegetarian Chili

What you need: 

3 tablespoons olive oil
3 onions, chopped
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper
2 peppers, chopped
3 garlic cloves, chopped
3 tablespoons unsweetened cocoa powder
1 large can (28 ounces) tomatoes, undrained, chopped
1 cup water
1 (15 ounce) can red kidney beans, rinsed and drained
1 (15 ounce)can black beans, rinsed and drained
2 cups fresh or frozen corn
1/2 cup bulgur
salt and pepper, to taste
cilantro, for garnish, optional

What you do: 

1. In a large pan, saute the onions and spices with oil. Add peppers and garlic for 1 minute.
2. Add cocoa, tomatoes, and water; bring to a boil. Add kidney and black beans, corn and bulgur.
3. Reduce heat to low and simmer, uncovered, for 15 minutes. or until bulgur is cooked. Add salt and pepper, to taste. To serve, sprinkle with cilantro.'

This is a wonderful, quick dinner that you would think would have taken a couple of hours to prepare (because of its wonderful taste and appearance), but in fact, is done from start to finish in 45 minutes or less. The only changes I made were to omit the cayenne pepper and only use 1/2 TBS of the chili powder (since I can't have spicy food). The result was a wonderfully tasty dinner with lots of flavor but not tons of spice - which is the way I need it! My hubby loved it too. I served it with some homemade corn bread and salad. Thanks for this great recipe! BTW it made enough for 2 dinners plus 2 leftover lunches - my hubby's portions are on the larger side, so I'd say this can feed 5-6 people.

Very, VERY awfull!  :o Never makin this again, ever! The cocoa made the whole dish look lik chocolate cake - and yes I did use the amount specified in the recipe... Gonna find me another chili!  :(

I just thought I'd follow on from my last post to tell you all that my Mum also loves this and I think I've had this every week since I first tried it.  It's so easy and it tastes great!

I don't know why but this turned out awful? We had to dump it down the sink.  :(

I love this, it's one of the best veggie meals that I've made and even my meateating garbage bin of a housemate ate a huge bowl of it and loved it.  I'm going to feed it to my mum next week.

I LOVE this recipe and make it about once a week now.  I omit the corn and usually have a bag of tortilla chips to go along with it.  :)
