Tuscan Kale with Nuts & Raisins
1 tablespoon olive oil
3 cloves garlic, chopped
1 bunch kale, chopped in small pieces
1/8 cup water
3 tablespoons raisins
1 tablespoon balsamic vinegar
3 tablespoons walnuts, chopped and roasted
coarse grind salt, to taste
1. Heat oil in a skillet on medium high and saute garlic for 1 minute. Add the chopped kale and water and steam covered.
2. Stir after 1 minute and cover another 2 minutes. Add the raisins and vinegar and saute another 2 minutes.
3. Serve with roasted nuts on top and some coarse salt to taste.
