juice of one coconut

Of course, its perfectly adaptable. Adjust quantities to taste. I load it with pineapple. You can always adjust the consistency with another juice, water, or soy milk if you drink it.
If you want to be fancy about it, make a few coconut slivers with the veggie peeler and sit them on top, then stick a pineapple wedge on the side of the glass. Now its not just healthy, 100% raw and delicious--its pretty too!
