Traditional New Years Meal

What you need: 

1 (14 ounce) roll vegan sausage (I use Gimme Lean)
cooking spray
1 pound can or bag sauerkraut
1 cup cooked lentils (cooked salad style, not totally soft)
3 green onions, chopped
2 tablespoons extra virgin olive oil
1 tablespoon mustard seeds
1-2 cloves garlic, finely chopped
coarse black pepper, to taste

What you do: 

1. In a large flat bottomed skillet, coated with cooking spray, brown vegan sausage, chopping into small pieces and you go.
2. When it's browned well on all sides, add the rest of the ingredients, mixing well.
3. Cover, simmer about 15 minutes, and serve with crusty vegan bread (pumpernickel is best with this, or some other strong rye).
I'm not sure of the meaning of the foods anymore, but my mother used to serve polish sausage cooked in sauerkraut, with a side of cold lentils with garlic and olive oil every year for New Years. This being my first New Years as a vegan, I had to improvise.

I'm not sure, I'll give it a try. Usually we poured our beans over the rice but this looks worth a try. Thank you so much, I'll repost to let you know how it goes :)

Every year my family had hamhocks and beans (black eyed peas) served over rice. Does anyone know of a vegan substitute for this dish? I can't replicate the creamy salty flavor of those perfect beans  :'(  I can't use many meat replacement products either as I have a gluten allergy and most contain wheat or gluten in some form.

I so miss this dish and would appreciate any help :) thanks!

The lentils are for good luck, possibly because they resemble coins.
