This was great!  I used "chili ready" diced tomatoes, omitted the cilantro, and added a bunch of chili powder.  I melted some FYH Nacho Cheeze into the soup instead of sprinkling it on top and topped it with crunched up tortilla chips.  Yum!

The soup was very good, especially the broth! It was nice and spicy. However, I would recommend using less onion. I didn't even use a whole onion and what I did put in the soup made it really thick. But that may just be a matter of preference!

I made this tonight for my dad and myself. It was soo good. He's a meat eater, and he LOVED it. Definitely going to make this again soon.
