Tomato-Veggie and Rice Soup

What you need:

2 cans (vegan) tomato soup
1 cup cooked rice, any kind is good, I have used white
mixed veggies--I have used broccoli,
sweet corn, and zucchini
seasonings of your choice

What you do:

First, I must mention this recipe is not exact--work with it!
Cut and boil your mixed veggies to your liking--I have boiled them in the past to use the stock for the soup rather than just water, gives good flavor. In the meantime, cook the rice, usually both are done at relatively the same time--helps out if you want this to be a very quick recipe.
After both is done, drain veggies and keep leftover water. Combine veggies and rice in a large pot and mix in tomato soup, usually I fill one can with leftover water and add to the consistency I prefer. Add at this time any seasonings you would like, I have used just pepper and a tad of basil.
Heat all ingredients, usually only a few minutes until it is hot and serve right away with vegan bread or pitas.
Play around with this recipe, I have and came up with many variations to it and it has turned out wonderful each time, let me know of any new variations. Enjoy!
