Tomato Sauce

What you need: 

4 medium sized tomatoes
2 tablespoons olive oil
2-3 cloves garlic, finely chopped
1 small onion, chopped, optional
1 cup tomato puree
1/4 cup tomato paste
1 tablespoon soy sauce
1 cup vegetable stock (or water)
1 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
few shakes pepper

What you do: 

1. Fill a large bowl with hot tap water and submerge the tomatoes. Peel and quarter the tomatoes.
2. Heat a large pot, and saute garlic in olive oil. Blend tomatoes.
3. Strain blended tomatoes to get rid of seeds and pulp. Add tomatoes, onion (if desired,) tomato puree, soy sauce, and tomato paste to pot, and slowly add vegetable stock (or water).
4. Let simmer at medium to low heat for about 45 minutes. Add spices and let simmer another 15-20 minutes. Consume.
Will keep in the refrigerator for about 1 week.
