Tomato Basil Penne

What you need: 

12 oz (1 box) penne pasta
7-8 plum tomatoes, diced
1 pkg firm tofu, cubed
1 bunch basil
juice and zest of 1 lemon
3-4 tablespoons balsamic vinegar, more to taste
2-3 tablespoons olive oil, more to taste
sea salt to taste
fresh ground pepper to taste

What you do: 

Boil pasta al dente. Cube and saute tofu until golden brown, cooking in oil and a splash of balsamic vinegar. While cooking pasta, dice tomatoes, tear basil in pieces and combine in a large bowl with all other ingredients. Pour hot cooked pasta into bowl and combine. This dish is easy to make and always a favorite. Enjoy!
