What you need: 

1 large brick of extra firm tofu
1 small yam
1 knob of ginger root (fresh) to taste
pepper to taste
1 to 2 tablespoon sesame oil
1 to 2 tablespoon soy sauce (or to taste)

What you do: 

Grate the tofu, yam and ginger. Combine the first three ingredients in a bowl. add the soy sauce and mix together well. In a wok or large frying pan heat the oil. When the oil is hot, add the tofu mixture and cook untill the yam is done (it shouldn't take very long). Season with pepper and serve over rice.
