Tofu with Veggies and Couscous

What you need: 

1 package firm tofu, drained and cubed
1 can diced tomatoes
1 small can of sliced olives
2 zucchini
1 tablespoon olive oil
soy sauce
1 package couscous

What you do: 

Cook the package of couscous according to directions.
Drain and cube the tofu.
Rinse and cube the zucchini.
In a pan, put 1 tablespoon of olive oil, tofu, zucchini, tomatoes, and olives. Put stove on medium heat and cook until is hot but the zucchini is still crunchy.
In a bowl ladle some of the couscous and some of the tofu/veggie mixture on top and add soy sauce to taste. Enjoy. =)

SO HOW'D IT GO?

I just finished making this.  It was really easy.  I didn't have fresh zucchini or any olives, so I used a bag of frozen veggies.  I also lacked soy sauce, so I used a tablespoon of miso paste.  I haven't tasted it yet, but it smells awesome.  I'm gonna try this again one day when I remember to buy olives.

Simple and good! I pressed my tofu before cubing, and took the liberty of sauteing some onion and garlic first. Very nice, light dish. I bet it's good cold, too.
