Tofu Veggie Soup
1 package of tofu (anything you prefer)
1/2 cup burger-style crumbles, sausage flavor
1 zucchini, chopped
1/2 onion, chopped
1 1/2 cups of water
1 vegetable bouillon cube
1-2 tablespoons of olive oil
add as much garlic and scallions as preferred
Heat olive oil and onion until the onion is slightly browned.
Add the garlic (scallions) , veggie crumbles, cut up tofu and cut up zucchini. Cook 1 minute more. Add the bouillon and water. Cook until bouillon is dissolved.
I pretty much just threw some stuff together not expecting too much out of it, but it was super good.
